    I've been really enjoying eating my meals outside with no distractions. It's nice to notice new things about my backyard or go to the beach to eat a meal and enjoy the noise of the waves. I like how this challenge is brining me outside more on a daily basis.

    The last three weeks have been difficult and I kept forgetting to post my progress, but I have noticed a significant reduction in my food waste around the house. I also switched to cooking more stew/soup dishes that incorporate a wider selection of ingredients before they started wilting. It also saved me at least two trips to the store!

    I made Picadillos de Tofu with Arroz Roja! Usually it's made with ground beef, but I tried making it with tofu instead, and it turned out delicious. Usually Picadillos is kinda heavy because of all the meat that is used in it, but adding the tofu plus more veggies makes the dish softer and kinda creamy too with how the tofu changes the dish....

    I do have this app that has been helping me to remember to take care of myself and even do my eco challenge. Its called finch and I have a 39 day streak. This is unusual for me as I struggle to stay focused and motivated to do something everyday.

    This past week was tough. Ive been going through bad burnout on top of constantly being busy with a million other things. I think the only thing Ive been consistent with (at least mostly) is walking as I have to walk to places to access anything I need.

    Living in an apartment complex, I imagine that if everyone in each apartment switched to a solar water heater, this could make a big difference in fossil fuel-generated electricity.
