March 28 at 8:15 AMToday is the last day I am doing my challenge before I leave for spring break, I am glad I stuck with it!
-
March 27 at 11:43 PMI can incorporate using an entire vegetable during my next meal prep by keeping edible skins on, turning tops and stems into sauces, stir-fries, or sautés. I can save scraps as well and use to make broth.
-
March 27 at 11:39 PMSpending time outdoors helps me appreciate my surroundings more and it helps me appreciate nature. It also helps me feel relaxed.
-
March 27 at 10:45 PMAs for my diet, I initially wanted to follow a vegan one, but I was not successful. However, with lent I managed to cut out more meat and really focus on my greens as main portions. My source of protein mostly came from chicken and not beef.

March 27 at 8:48 PMMy final post! Historically to get around (because I don't have a car) I would mostly rely on carpooling/ paying friends in gas money for rides, or ubering if I had some extra funds to spend. i would take the bus on occasion, but it takes much longer so I wasn't a big fan of that. For my eco challenge, I chose to take the bus every day that I...

March 27 at 8:39 PMI made clam chowder! It was super easy, turned out amazing, and lasted me 2 meals afterward. I usually go down to the Fish Hopper at the Wharf and buy a bread bowl, but I decided to try making the recipe myself to save money!!
-
March 27 at 8:36 PMSince starting this challenge, I have been working on controlling my portion sizes, and taking only what I will actually be able to finish, I can always go back for more if I am still hungry afterwards!
