Amy Southern 3/25/2026 10:56 PMOver the last five weeks, I have reduced my food waste and make an effort to eat smaller portion sizes daily, such as limiting how much I purchase from the grocery weekly because this challenge has made me realize how much food I'm wasting on a daily basis if not weekly. Even considering the amount I waste if I get takeout, so I am now consistently asking myself, do I really need this much food? How much of it am I realistically going to consume once it's purchased? I also feel better about my health because not asking yourself these questions can lead to overeating, which is sometimes the case for me. -
Amy Southern 3/25/2026 10:48 PMOver the last month, I have shopped at the farmers markets once a week. I combine this action with learning about regenerative agriculture which I've spent an hour a day researching due to other projects with my classes that I've created to achieve this goal. I shop at the farmers markets every Sunday, specifically the one-off Reservation Road located in the outlet area. -
Amy Southern 3/25/2026 10:40 PMComposting has been difficult but very necessary to reduce my carbon footprint. It is a challenge when it comes to having access to a green bin when I don't have one outside my door. I have had to drive the compost weekly to a site near CSUMB which can be inconvenient for those not willing to make the effort. -
Amy Southern 3/25/2026 10:35 PMMy Bike Eco-challenge has been going well. I have commuted to class by bike once a week for the last four weeks.
It has been inspiring and fun. This is the perfect action to get me using my E-bike more often, which I've neglected since moving to Monterey due to not knowing the area or hazards well.
