How does knowing the difference between use by, sell by, and best by dates empower you to make better decisions?

Knowing the difference between these three categories empowers me to know that unless the food shows visual or other physical (smell, texture) signs of spoilage, it can still be consumed, given it's been otherwise handled safely. The only product for which one must abide by these dates is baby or infant formula, as it must retain its exact nutritional values for it to be safe.
