In doing this challenge (keeping a food log to reduce my food waste), I've realized that just being a little more mindful about the food I get each day doesn't take much effort. I've been able to make better choices about how much food I buy and saving leftovers.
"My goal participating in the ecochallenge is to learn more about sustainable practices both for the planet and for myself. I also hope to respond to other people's posts about their progress and offer support and encouragement!"

Reduced Food Waste
I will keep a daily log of food I throw away during Drawdown Ecochallenge, either because it went bad before I ate it, I put too much on my plate, or it was scraps from food preparation, and commit to reducing my food waste throughout the challenge.
Transportation
Go for a Daily Walk
Walkable Cities
I will take a walk for 30 minutes each day and take note of the infrastructure that makes walking more or less enjoyable, accessible, and possible.

REFLECTION QUESTIONFood, Agriculture, and Land UseAn average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Where would you rather use this money?
Kinsey Lathbury 3/22/2026 7:45 PMAt this moment in time I would rather use the $1,500 to make my school payments. Later down the line if I end up having a family of my own I would want to use that money to support my loved ones (maybe do a nice family outing together).

Kinsey Lathbury 3/22/2026 7:40 PMHello all! Today I completed my most challenging task, which was sharing information and a Carbon Calculator with a business. I shared it with the Cooperative Learning Center, and I even encouraged them to participate in the Ecochallenge! I hope that my message makes an impact and I am very grateful for taking this class and being able to do something like this :) -
Kinsey Lathbury 3/03/2026 11:17 PMI didn't end up getting a walk in today (other than walking between classes), but I was able to start my food log! I ended up throwing away a small amount of food today because I didn't have enough time to finish it before work, so I'm going to try to keep my time constraints in mind when thinking about the amount of food I'm getting. -
Kinsey Lathbury 3/03/2026 12:33 PMHello all! I'm a little late to joining the ecochallege, but I'm excited to get started! My three goals are to keep a daily log of my food waste so that I can see my daily trends and reduce my waste, go for a 30 minute walk daily, and to share a business carbon calculator with the Cooperative Learning Center in order to encourage more sustainable practices. If anyone has any tips for any of these, let me know!
