    A mindful walk is about slowing down and noticing, letting the world around you and the rhythm of your body bring you into the present moment. Mindfulness is the practice of paying full attention to the present moment, observing your thoughts and feelings. It’s about being aware, not reactive.

    My favorite vegan breakfast usually starts with something savory, like avocado toast topped with cherry tomatoes, hemp seeds, and a drizzle of olive oil. I’ll sometimes add a side of crispy hash browns for a little extra flavor and crunch.

    While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come from eating/serving smaller portions?

    Smaller portions are easier for the body to process, reducing bloating, discomfort, and sluggishness after meals. Overeating can make you feel tired or unfocused, while moderate portions help sustain steady energy levels throughout the day.

    I made a bowl with quinoa, roasted vegetables, avocado, and chickpeas, and I was surprised at how filling and flavorful it was. Eating plant-based made me more aware of what goes into my food and how much variety there really is without using animal products. It also made me think about sustainability and how small choices can make a difference for the planet.

    On my daily walks I noticed how the whole environment is starting to change, the air feels cooler and crisp, and the trees are starting to change from green to a beautiful yellow. I’ve also noticed how walking helps clear my mind and gives me a chance to slow down and reflect. What I enjoy most is the sense of calm it brings and the chance to connect with my surroundings. There’s also a sense of calm and reflection in the fall season.

    Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our bodies, our planet, and other people?

    People in richer countries tend to eat more meat because they usually have more money, easier access to animal products, and cultural traditions that include meat as a main part of meals. It impacts the planet because raising animals uses a lot of land, water, and energy, and produces greenhouse gases that contribute to climate change.
