    In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

    Ever since I learned that Apple skin have more fibers, polyphenol and vitamin C than the fruit part, I eat the skins.
    I don't peel carrots. Potatoes and sweet potatoes can be baked and eaten with skin on.

    On a side note, I try to regrow some of the veggies - Onion centers grow roots and green if you put them in water, so as cabbage cores, garlic, celery, carrot's top, some of the herbs, etc.

    While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come from eating/serving smaller portions?

    Being mindful about the food I'm eating. Being able to prevent over-working my guts and organs.

      When eating in smaller toperweaer ( because I'm always on the go) has allowed me to be just as fulfilled and the exercise has also helped. But I've noticed that I don't waste food when bring smaller portions.

    What was the hardest item to reduce using or cut out that is plastic? Did you find a way to do it?

    The plastic to-go food containers. I try to re-use them, but there are more than I can make a use of.

    In an effort to reduce the to-go containers from the restaurants, we have gotten two stainless containers with lids from an Indian grocery store. We keep those containers in the car, and use them for the left-over food at restaurants, instead of asking for To-go containers.

    For the take-out orders, I have not found a way to reduce the plastic containers. I almost want to bring my glass Tupperware to the restaurants to receive the food (^^;)
