    I made Picadillos de Tofu with Arroz Roja! Usually it's made with ground beef, but I tried making it with tofu instead, and it turned out delicious. Usually Picadillos is kinda heavy because of all the meat that is used in it, but adding the tofu plus more veggies makes the dish softer and kinda creamy too with how the tofu changes the dish. Find a picadillos recipe if you can, highly recommend trying it! Going vegetarian has been fun :)

    My challenge is going alright! I just keep forgetting to log in and notify that I've been eating my meals lol. Learning about how to cook with different kinds of proteins besides meats has been really cool. The biggest challenge has been trying to work with my favorite Mexican recipes but with meat-alternatives, but it's at least fun to do.

    Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our bodies, our planet, and other people?

    I believe in general people in richer countries have easier access and the convenience to find readily available meats than most other countries. I know in the American super markets we have in the town I live in, I can find all kinds of different meats, and all kinds of different cuts of them in a store that's like 5-10 minutes away. I hear that meats combined with little cardio activity can be bad for your heart. I also hear that because the meats we eat support the industry so much, it makes agricultural industries continue to destroy forest in order to make way for pastures that livestock can live on.
