It seems that people in richer countries eat more meat than people in other places because meat is more expensive than other protein sources like lentils, beans, tofu, etc. As everyone in the world becomes incrementally wealthier, they are adding meat to their diets, and I think it's also b/c they see it in TV shows from the USA etc. - the power of these role models in the media is strong. However, people in North America eat a lot more meat than they did a few decades ago, and they are having a lot more health problems, partly because of red meat. Some people reduce meat consumption for health, some for animal rights, some for climate concerns, and some for a combination thereof. Any amount of reduction that you do will help draw down our global emissions and ensure a healthier future for you and your children. This requires a culture shift among some groups. Let's make it happen.

Composting at JAC
The goal is to compost the parts of your meals that you don't eat while on campus. This can include all fruits, veggies, meats, oils (like salad dressing), breads, etc. - all food! Also, it includes used napkins and cardboard food containers. Please use the compost (usually brown) bins around campus, and take selfies or get someone to photograph you using the bins.
