    Mindful eating is healthier for us than eating with distractions. How does your eating experience differ when practicing mindfulness?

    I find that when I eat mindfully, without some sort of media distraction, I eat slower. I also enjoy eating outside at school if I bring a packed lunch with me. It feels kind of weird at first, especially if I'm by myself because a natural habit is to go on my phone but it's nice to slow down for a little bit.

    I've been consciously trying to make coffee in my apartment instead of getting a drink in a cafe and using their single use plastic cups. Also saves me money! I just learned how to make my own cold brew!

    So far, eating meatless meals has been a lot easier than I expected. Before this challenge I only really ate meals with meat for dinner, so it hasn't been too big of a shock to shift to vegetarian. I've also been checking my food labels for palm oil and avoid it after talking about it in class.

    Since I'm doing meatless meals for this challenge too, I made veggie sushi rolls tonight! They turned out really good, I added rice, soy sauce, cucumbers, carrots, lettuce, and snap peas. 10/10 would make again
