    There are choices in all areas - transportation, food, clothing, travel, etc. Calculating the footprint is good but it’s making those pesky “different choices” that is the real challenge.

    My sustainable seafood of choice is farm raised salmon. And as I am not an adventurous chef, I went to my trust broiler and used some lemon and Old Bay Seasoning. Pretty easy and quick.

    Using smaller plates allows for a focus of the items being put on the plate - smaller portions but also looking for a variety of colors and textures. It improves the visual appeal of the food and variety is usually associated with a wider range of nutrients.

    I saw a recent report showing research that demonstrates a linkage between red meat consumption and diabetes. It’s just one of the human health issues associated with meat consumption. The need for protein can be satisfied with alternatives and obviously in populations in poor countries they focus on both plant protein as well as seafood.
