Become advocates for plant-based diets
During an Earth Day service, I will share information about how Native North Americans appreciated the land and left small footprints. By choosing a meat-free diet, one can greatly reduce their impact on the earth. I chose this goal, because I eat a plant-based diet and hold monthly meetings encouraging and supporting others.

Linda Oaksford 4/26/2021 8:27 AMI watched the movie, Kiss the Soil, which taught me about regenerative agriculture. When cleaning out our vegetable garden beds, we left the fallen leaves as they will provide a good covering for the new plants, as well as good mulch for the garden beds. -
Linda Oaksford 4/24/2021 4:51 PMToday I signed on to the Food Revolution Summit. Listening to the professionals speak about whole-food plant-based diets and the benefits made me realize that there is a big difference between veganism and eating whole foods. I'm going to try to eat more whole foods and less processed foods made with flour, salt, sugar, and/or oils. -
Linda Oaksford 4/24/2021 4:49 PMYesterday I watched Dr. Klapper speak about plant-based diets in a TEDX talk. He discussed the fact that eating whole-food plant-based diets is not only good for your health, but also good for the animals and the planet. It re-energized me and made me proud to be called a vegan. -
Reflection QuestionTransportation Go for a Daily WalkWhat have you noticed on your daily walks? What have you enjoyed? What infrastructure changes could make your walks more enjoyable or possible?
Linda Oaksford 4/05/2021 7:45 PMI noticed that spring has definitely sprung! The brilliance of all the colors of leaves and flowers is outstanding. My citrus trees also emit the most delicious smells - can't wait to harvest the fruit next winter! -
Reflection QuestionFood, Agriculture, and Land Use Eat MindfullyMindful eating is healthier for us than eating with distractions. How does your eating experience differ when practicing mindfulness?
Linda Oaksford 4/05/2021 2:01 PMI am thankful that I'm eating food from a local farmer and that the food hasn't traveled thousands of miles.
