  • Reflection Question
    Food Support Local Food Systems
Dependable fresh food, supporting local farmers and building resilient communities are just a few benefits of local food systems. Which of these (or other) advantages inspire you the most?

I think all three of these are important to me as well as supporting farming as a career.  I've met many young farmers in my years of farmers' market shopping, which I find so encouraging.  I think it's really important that sustainable, local, small scale farming (vs. industrial farming) continues to be a viable career option for future generations.

I didn't really know what biomass was before this challenge.  Learning about the innovative approaches people are taking around the world to address the energy crisis was fascinating.  I'm especially intrigued by work being done in Kenya to simultaneously find solutions to sanitation and fuel problems.
  • Reflection Question
    Food Zero-waste Cooking
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

I learned about using different parts of vegetables I would normally throw away.  Today, I tried cooking kale stems for the first time.  It was tasty and my kids asked me to make it again!

I was really shocked to learn that globally we waste so much food.  Not only is this astounding in terms of the environmental impact but also in terms of the needless suffering of so many around the world who are starving.
  • Reflection Question
Transport Research and Consider Switching to a Hybrid or Electric Vehicle
Reducing (or eliminating) exhaust emissions and improving public health are two benefits of green vehicles. What other motivators inspire you to consider switching to a more fuel-efficient vehicle?

I would love to switch to an electric or hybrid vehicle, but I need a van homeschooling and carpooling purposes.   Before  we bought our van, I researched eco-friendly vans and was disappointed to find there was one option and it was way out of our price range.  Someone invent a reasonably priced hybrid van!
  • Reflection Question
Transport Research and Advocate for High-Speed Rail
What are the factors that influence your choice of transportation? These can include things like money, time, and convenience, as well as perceptions of danger or safety. What would need to change for you to regularly choose more climate-friendly options?

I usually try to minimize how much driving I do by coordinating my trips.  For example, I try to run errands in certain areas only when I'm already heading to those areas for other reasons.  I also try to coordinate carpooling as much as I can.  I would love to see more options for reliable and convenient public transportation so I can drive less frequently as well as safer road conditions so I feel more comfortable choosing biking as a means of transportation.

I feel so grateful for the carpooling options we have with friends like you!  For the sake of the environment and also for our sanity!
