I do not eat dairy products for environmental, health and ethical reasons.  I know that producing plant based (PB) beverages still has quite an ecological impact-though not nearly as damaging as the dairy industry-and I wanted to learn more about the impact of my personal dairy-free choices. I found this link (it is from a year ago) but it is super informative, and provides a chart of energy and water used to create specific PB beverages plus there is an exercise where you can plug in your own food choices and see the environmental impact of what YOU are eating!  It's pretty cool....   https://www.bbc.com/news/science-environment-46654042

This is a very interesting (and depressing) link from the Audubon Society about climate change and the impact on bird populations. It has interactive links to look by season and by bird and you can put in your own zip code to find out what's happening where you live. Take a look....https://www.audubon.org/climate/survivalbydegrees
